This cocktail is served up, but is also lovely served tall over ice.
Makes 1 cocktail.
1 1/2 ounces vodka
3/4 ounce fresh lemon juice
3/4 ounce simple syrup*
1 – 2 ounces chilled brut champagne or sparkling wine
Garnish: raspberry on a pick
Measure the vodka, lemon juice, and simple syrup into a mixing glass. Drop in raspberries. Fill with ice. Cap and shake vigorously to incorporate raspberries. Strain (or double strain) into a large martini glass. Top with champagne. Garnish with a raspberry on a pick.
*To make simple syrup: combine 2 cups sugar and 2 cups water in a pan. Bring to a quick boil over medium-high heat. Remove from heat as soon as it comes to a boil. Cool and then store refrigerated for up to 3 weeks.
